Baking: Quick and Easy Shortbread cookies


I thought today would be a good time to mix things up a bit. Take a little break from the beauty and clothing posts, for something that’s a treat for the eyes AND the taste buds. Shortbread cookies! These delicious, flaky treats are super easy to make and will melt in your mouth like butter (spoiler alert, you’re gonna need a lot of butter).
Now, while I’ve opted to go for something a little more conservative (mostly because no one in my family appreciates chocolate like I do), I’m sure it wouldn’t hurt to throw in some chocolate or butterscotch chips to sweeten things up. GO WILD!
Here is what you’ll need:
Ingredients: 
- 2 cups flour
- 1/2 cup powdered sugar
- 1 cup unsalted butter (aka enough to make Julie Child proud)
- 1 teaspoon vanilla extract

1. Cream the butter and powdered sugar with an electric mixer or by hand. If you need to, put your butter in the microwave for 15-20 seconds to soften it 
  
2. Once the butter and sugar are combined, add the vanilla extract


 3. Gradually add in the flour, until just combined. I used a plastic spatula to do this.
4. Prepare a baking sheet topped with a piece of un-greased parchment paper. Roll the dough into little balls (approximately one inch across) then flatten them using a fork. Bake for 25- 30 minutes at 350 F till the cookies are lightly goldened (is that a word?) 
5. Once the cookies are done remove them from the baking sheet and leave them to cool. They should have a lovely flaky consistency!
